In Latin, “crepitus” refers to a ‘crackling’ or “popping” sound. In this case, the name of this sparkling wine—produced using the ancestral method—refers to the sound produced by the effervescence of the wine’s bubbles as they burst.
Intriguing on the nose, with notes of white flowers and citrus (lime, citron) and crisp yellow fruit, green apple, and white peach. It also expresses elegant hints of bread crust and fresh yeast. On the palate, it is fresh, savory, and lively, with a subtle perlage that caresses the tongue. The finish is citrusy and briny, with a slightly almondy aftertaste that invites another sip.
Pairings: Ideal with aperitifs, tuna tartare with citrus and ginger, fried seafood, tempura vegetables, and fresh goat cheese or stracchino with aromatic herbs, or buffalo mozzarella. Excellent with white pizza topped with mortadella and pistachios or figs.
